Pasta alla Norma
This is a traditional Italian pasta dish from Sicily, usually begun by cooking eggplant on the stove in a hefty amount of oil. I prefer roasting the eggplant - less oil plus the eggplant holds its shape better, especially when you roast at a high temp to caramelise the surface! Finishing with a good amount of fresh basil is traditional but even if you don't have any, there's other alternatives to add a touch of other flavour - such as fresh thyme, or extra dried herbs in the sauce. This is an excellent and satisfyingly "meaty" vegetarian main dish that will have even card-carrying carnivores asking for seconds!

One-Pan Mongolian Beef Noodles with Broccoli
Here's the newest version of the much-loved One Pan Asian Beef Noodles (2019!). The noodles cook right in the sauce - no separate boiling - so they soak up the tasty flavour of the sauce while their starch thickens the sauce so it coats everything beautifully. Today's version uses the sauce from everybody's favourite Mongolian Lamb, plus plenty of broccoli for a complete dinner. No need to fear precision with this recipe - those noodle cakes are indestructible!

Feel free to use any add-ins of choice, like toffee chips, nuts, dried fruit, 1 1/2 cups in total.

Using the tried-and-loved method from Truly Crunchy Baked Chicken Tenders, these oven-baked schnitzels really are golden and crunchy all over, without overcooking the chicken inside! It's also pretty great that you can pull 4 hot schnitzels out of the oven rather than frying one-by-one. The trick is to toast the panko in the oven first (effortless!), then use an extra-strong egg-and-flour dredge so the crumbs stick well, and bake for just 13 minutes in a hot oven. Marinate the chicken in the egg mixture if you can for extra flavour and juiciness. But it's still worth making if you don't!
