Cheese and Cucumber Sandwiches

- Sandwich bread400 g
- Cheese slices8 ea
- Cucumber200 g
- Butter40 g
Method
- Butter every slice of bread right to the edges — the butter is what stops the cucumber soaking in.
- Slice the cucumber as thinly as you can and pat the slices dry on paper towel.
- Lay the cheese on the buttered bread first, then the cucumber on top of it, and season with a little pepper.
- Close the sandwiches, press gently, and cut into triangles or fingers depending on who is eating them.
- Wrap each one so it holds together until lunchtime.
