Cheese and Cucumber Sandwiches

Ingredients

  • Sandwich bread400 g
  • Cheese slices8 ea
  • Cucumber200 g
  • Butter40 g

Method

  1. Butter every slice of bread right to the edges — the butter is what stops the cucumber soaking in.
  2. Slice the cucumber as thinly as you can and pat the slices dry on paper towel.
  3. Lay the cheese on the buttered bread first, then the cucumber on top of it, and season with a little pepper.
  4. Close the sandwiches, press gently, and cut into triangles or fingers depending on who is eating them.
  5. Wrap each one so it holds together until lunchtime.
