
Baked Fish with Crushed Potatoes and Peas
Light, quick, and forgiving about which white fish is cheapest.

- White fish fillets600 g
- Potatoes800 g
- Frozen peas300 g
- Butter40 g
- Lemons2 ea
- Olive oil20 ml
Method
- Heat the oven to 200C. Boil the potatoes in salted water for 18-20 minutes until tender.
- Place the fish on a lined tray, drizzle with the oil, season, and top with thin lemon slices.
- Bake for 12-15 minutes until the fish flakes easily.
- Add the peas to the potatoes for the last 3 minutes, then drain and crush roughly with the butter.
- Serve the fish on the crushed potatoes with the remaining lemon squeezed over.
