
Sausage and Lentil One-Pot
A packet of sausages and a bag of lentils, and nobody leaves the table hungry.

- Thick pork sausages8 ea
- Dried brown lentils300 g
- Tinned chopped tomatoes400 g
- Carrots250 g
- Brown onions200 g
- Celery100 g
- Garlic15 g
- Olive oil20 ml
- Dried thyme2 g
Method
- Brown the sausages whole in the oil in a large pot, then lift them out and cut each one into three.
- Cook the diced onion, carrot and celery in the same pot for 8 minutes until soft.
- Add the garlic and thyme for 1 minute, then the rinsed lentils, the tinned tomatoes and 900ml water.
- Return the sausages, bring to a simmer, and cook uncovered for 35-40 minutes until the lentils are tender.
- Season generously and let it stand for 5 minutes before serving, as it thickens off the heat.
