Sausage and Lentil One-Pot

A packet of sausages and a bag of lentils, and nobody leaves the table hungry.

Ingredients

  • Thick pork sausages8 ea
  • Dried brown lentils300 g
  • Tinned chopped tomatoes400 g
  • Carrots250 g
  • Brown onions200 g
  • Celery100 g
  • Garlic15 g
  • Olive oil20 ml
  • Dried thyme2 g

Method

  1. Brown the sausages whole in the oil in a large pot, then lift them out and cut each one into three.
  2. Cook the diced onion, carrot and celery in the same pot for 8 minutes until soft.
  3. Add the garlic and thyme for 1 minute, then the rinsed lentils, the tinned tomatoes and 900ml water.
  4. Return the sausages, bring to a simmer, and cook uncovered for 35-40 minutes until the lentils are tender.
  5. Season generously and let it stand for 5 minutes before serving, as it thickens off the heat.
