
Lamb Koftas with Flatbreads and Yoghurt
Spiced lamb off the grill, rolled up with salad and a spoon of yoghurt.

- Lamb mince600 g
- Flatbreads8 ea
- Greek yoghurt200 g
- Tomatoes200 g
- Cucumber150 g
- Lettuce100 g
- Brown onion150 g
- Garlic15 g
- Lemons1 ea
- Ground cumin4 g
- Ground coriander2 g
Method
- Grate the onion coarsely and squeeze out the excess liquid so the mixture holds together.
- Mix the lamb mince with the onion, crushed garlic, cumin and coriander and season generously.
- Shape into 12 short sausages around your fingers and chill for 10 minutes.
- Grill or barbecue for 10-12 minutes, turning, until browned all over and cooked through.
- Stir the yoghurt with the juice of the lemon and a pinch of salt.
- Warm the flatbreads and build with shredded lettuce, sliced cucumber and tomato, the koftas and the yoghurt sauce.
