
Split Pea and Ham Soup
A bag of dried peas does all the work; the ham is just there to season it.

Ingredients
- Dried split peas350 g
- Diced ham250 g
- Carrots200 g
- Celery150 g
- Brown onion200 g
- Garlic10 g
- Olive oil20 ml
- Dried thyme1 tsp
Method
- Rinse the split peas under cold water and drain them.
- Cook the diced onion, carrot and celery in the oil in a large pot for 10 minutes until soft.
- Add the garlic and thyme for a minute, then the split peas and 2 litres of water.
- Bring to the boil, skim off any foam, and simmer covered for 50 minutes until the peas collapse.
- Stir in the diced ham and cook for a further 10 minutes.
- Season to taste and mash a little against the side of the pot if you want it thicker.
