Cheese and Vegetable Pinwheels

A wrap rolled up and sliced into rounds, which somehow makes salad acceptable.

Ingredients

  • Wholemeal wraps4 ea
  • Cream cheese150 g
  • Carrots150 g
  • Cucumber120 g
  • Capsicum100 g
  • Baby spinach40 g

Method

  1. Coarsely grate the carrot and cut the cucumber and capsicum into long thin matchsticks.
  2. Spread each wrap with cream cheese all the way to the edge, which is what glues the roll shut.
  3. Scatter the spinach over the cream cheese, then lay the vegetables in lines across the wrap.
  4. Roll each wrap up tightly from one edge, pressing as you go so there are no gaps.
  5. Chill the rolls for 15 minutes if you have time, then cut each into four thick rounds.
