Split Pea and Ham Soup

A bag of dried peas does all the work; the ham is just there to season it.

Ingredients

  • Dried split peas350 g
  • Diced ham250 g
  • Carrots200 g
  • Celery150 g
  • Brown onion200 g
  • Garlic10 g
  • Olive oil20 ml
  • Dried thyme1 g

Method

  1. Rinse the split peas under cold water and drain them.
  2. Cook the diced onion, carrot and celery in the oil in a large pot for 10 minutes until soft.
  3. Add the garlic and thyme for a minute, then the split peas and 2 litres of water.
  4. Bring to the boil, skim off any foam, and simmer covered for 50 minutes until the peas collapse.
  5. Stir in the diced ham and cook for a further 10 minutes.
  6. Season to taste and mash a little against the side of the pot if you want it thicker.
