Spicy Tuna Stew (Chamchi-jjigae)

A quick and easy Korean stew made with canned tuna, onion, green chili peppers, gochujang and gochugaru. Delicious with rice and lettuce wraps.

Ingredients

  • canned tuna450 g
  • onion — cut into chunks280 g
  • long green chili peppers — sliced2 ea
  • gochujang40 g
  • gochugaru12 g
  • soy sauce15 ml
  • garlic cloves — minced4 ea
  • green onions — chopped2 ea
  • head lettuce — leaves separated, to serve1 ea

Method

  1. Spread the onion over the bottom of a shallow pan. Add half of the sliced green chili peppers over top.
  2. Add the tuna, gochujang (use up to 3 tablespoons if you like it spicier), gochugaru, soy sauce and 360 ml water.
  3. Cover and cook for 10 minutes over medium-high heat.
  4. Uncover and stir with a wooden spoon to mix it up.
  5. Stir in the garlic, green onion and the rest of the sliced green chili peppers.
  6. Cook uncovered for another 3 to 5 minutes to thicken the stew.
  7. Remove from the heat and serve right away with rice, lettuce and ssamjang.
