Spiced Beef Mince and Pea Curry

Ingredients

  • Beef mince500 g
  • Potatoes400 g
  • Frozen peas250 g
  • Tinned chopped tomatoes400 g
  • Brown onion200 g
  • Garlic15 g
  • Fresh ginger15 g
  • Basmati rice300 g
  • Curry powder13 g
  • Vegetable oil20 ml

Method

  1. Start the rice so it is ready when the curry is.
  2. Cook the diced onion in the oil over medium heat for 8 minutes until soft and golden at the edges.
  3. Add the crushed garlic, grated ginger and curry powder and stir for 1 minute until fragrant.
  4. Add the mince and brown it well, breaking up the lumps with a wooden spoon.
  5. Stir in the tinned tomatoes and diced potato with a splash of water, cover, and simmer for 20 minutes until the potato is tender.
  6. Stir the peas through, cook for 3 minutes more, then season to taste and serve over the rice.
