
Spiced Beef Mince and Pea Curry

- Beef mince500 g
- Potatoes400 g
- Frozen peas250 g
- Tinned chopped tomatoes400 g
- Brown onion200 g
- Garlic15 g
- Fresh ginger15 g
- Basmati rice300 g
- Curry powder13 g
- Vegetable oil20 ml
Method
- Start the rice so it is ready when the curry is.
- Cook the diced onion in the oil over medium heat for 8 minutes until soft and golden at the edges.
- Add the crushed garlic, grated ginger and curry powder and stir for 1 minute until fragrant.
- Add the mince and brown it well, breaking up the lumps with a wooden spoon.
- Stir in the tinned tomatoes and diced potato with a splash of water, cover, and simmer for 20 minutes until the potato is tender.
- Stir the peas through, cook for 3 minutes more, then season to taste and serve over the rice.
