Ground beef, two kinds of beans and a homemade spice blend simmered into a classic comfort-food chili that gets better as leftovers.

Ingredients

  • olive oil30 ml
  • yellow onion — diced1 ea
  • garlic cloves — minced2 ea
  • ground beef450 g
  • canned kidney beans — drained and rinsed440 g
  • canned black beans — drained and rinsed430 g
  • canned diced tomatoes410 g
  • tomato paste170 g
  • chili powder3 tsp
  • ground cumin — 1 tsp2.5 g
  • cayenne pepper0.25 tsp
  • garlic powder0.25 tsp
  • onion powder0.5 tsp
  • brown sugar — 1 ½ tsp6 g
  • salt — 1 tsp6 g
  • black pepper0.5 tsp

Method

  1. Dice the onion and mince the garlic. Add both to a large pot with the olive oil and cook over medium heat until soft and translucent.
  2. Add the ground beef and continue to sauté until fully browned.
  3. Drain and rinse the beans and add them to the pot along with the diced tomatoes, tomato paste, 250 ml (1 cup) water, and all of the chili seasoning ingredients. Stir until well combined.
  4. Cover and simmer over low heat for at least 30 minutes, stirring occasionally (the flavour gets better the longer it simmers).
  5. Taste, adjust the salt or seasonings if needed, and serve hot with your favourite toppings.
