Ham and Cheese Waffles

Makes about 10 small waffles. Bake a batch in the school holidays and freeze them for easy lunches next term.

Ingredients

  • plain flour200 g
  • baking powder — 1 tsp4.5 g
  • salted butter — melted and cooled50 g
  • egg1 ea
  • milk200 ml
  • ham — cut into small cubes80 g
  • grated mozzarella cheese80 g

Method

  1. Preheat your waffle maker according to the manufacturer's instructions.
  2. In a large bowl, whisk together the melted butter, egg and milk until well combined.
  3. Add the flour and baking powder and whisk gently until just combined.
  4. Fold through the ham and grated mozzarella.
  5. Lightly grease the waffle maker if needed, then spoon the batter onto the hot plates.
  6. Cook for 4–5 minutes per waffle, until golden and crisp outside and cooked through.
  7. Serve warm, or cool completely and freeze in an airtight container. Pack straight from frozen into lunchboxes, or reheat briefly for breakfast.

    • 200 ml Oat milk instead of milk
    • 80 g Dairy-free grated cheese instead of grated mozzarella cheese

    Whisk the oil with the egg and oat milk in place of melted butter; cooking time is unchanged.
