Cold soba noodle salad with peach, cucumber and tomato

Chilled nutty soba noodles tossed in a gingery soy-sesame dressing with juicy peach, crisp cucumber and tomato.

Ingredients

  • soba noodles270 g
  • peaches — stones removed and diced2 ea
  • Persian cucumbers — trimmed and diced2 ea
  • medium tomatoes — diced2 ea
  • scallions — thinly sliced2 ea
  • cilantro leaves10 g
  • toasted sesame seeds9 g
  • garlic clove — grated1 ea
  • ginger — grated20 g
  • soy sauce30 ml
  • toasted sesame oil — including 10 ml for the noodles40 ml
  • rice vinegar30 ml

Method

  1. Bring a large saucepan of salted water to the boil. Cook the soba noodles according to the packet instructions. Drain, refresh under cold water and drain again. Transfer to a bowl, drizzle with 1 to 2 teaspoons sesame oil and toss to coat. Cover and refrigerate for 1 hour, or up to 24 hours.
  2. When ready to eat, make the dressing in a large serving bowl: whisk together the garlic, ginger, soy sauce, 2 tablespoons sesame oil and rice vinegar.
  3. Add the cold soba noodles and top with the peaches, cucumbers, tomatoes, scallions and cilantro. Toss to coat. Taste and season with salt and pepper.
  4. Scatter with sesame seeds and eat immediately.

    • 30 ml Tamari instead of soy sauce

    Cook the gluten-free soba to the packet time and rinse well in cold water, as it can be more fragile; the dressing is made the same way with tamari.
