Chicken, Carrot and Cheese Sandwiches

Grated carrot is the vegetable that disappears into a sandwich unnoticed.

Ingredients

  • Cooked chicken breast300 g
  • Carrots150 g
  • Grated cheese80 g
  • Greek yoghurt60 g
  • Sandwich bread400 g
  • Butter30 g

Method

  1. Shred or finely chop the cooked chicken and coarsely grate the carrot.
  2. Mix the chicken, carrot and cheese through the yoghurt and season well.
  3. Butter the bread to the edges, then spread the filling evenly over half the slices.
  4. Close the sandwiches, cut them in half, and pack them cold.
  5. Make the filling the night before if the morning is tight — it keeps overnight in the fridge.
