Chicken, Carrot and Cheese Sandwiches

- Cooked chicken breast300 g
- Carrots150 g
- Grated cheese80 g
- Greek yoghurt60 g
- Sandwich bread400 g
- Butter30 g
Method
- Shred or finely chop the cooked chicken and coarsely grate the carrot.
- Mix the chicken, carrot and cheese through the yoghurt and season well.
- Butter the bread to the edges, then spread the filling evenly over half the slices.
- Close the sandwiches, cut them in half, and pack them cold.
- Make the filling the night before if the morning is tight — it keeps overnight in the fridge.
